One-Pan Salmon Dinner

Ingredients:

    • 4 salmon filets

    • 1 pound asparagus - ends trimmed

    • 2 pounds baby red or gold potatoes - quartered

    • 3 tablespoons olive oil

    • salt and pepper to taste

    • Any spices or sauces you would want to season your salmon with

Directions: 

    • Heat oven to 400 F

    • Toss potatoes with 2 tablespoons olive oil, salt and pepper to taste, garlic powder.

    • Bake potatoes for 15 minutes on a sheet pan covered with parchment paper. 

    • Place salmon filets (seasoned to your liking)  in the center of the pan and asparagus to the side. 

    • Drizzle asparagus with olive oil, season with salt and pepper to taste and squeeze lemon juice over salmon. 

    • Bake for 15 minutes until asparagus and potatoes are fork-tender and salmon is cooked through. 

    • Serve and enjoy!
