One-Pan Salmon Dinner
Ingredients:
4 salmon filets
1 pound asparagus - ends trimmed
2 pounds baby red or gold potatoes - quartered
3 tablespoons olive oil
salt and pepper to taste
Any spices or sauces you would want to season your salmon with
Directions:
Heat oven to 400 F
Toss potatoes with 2 tablespoons olive oil, salt and pepper to taste, garlic powder.
Bake potatoes for 15 minutes on a sheet pan covered with parchment paper.
Place salmon filets (seasoned to your liking) in the center of the pan and asparagus to the side.
Drizzle asparagus with olive oil, season with salt and pepper to taste and squeeze lemon juice over salmon.
Bake for 15 minutes until asparagus and potatoes are fork-tender and salmon is cooked through.
Serve and enjoy!
