Gyoza with a Lacy Skirt

Ingredients:

  • 1/3 cup water

  • 2 tsp flour

  • pinch of salt

  • frozen dumplings

  • 1 tbsp vegetable oil

Directions:

  1. Make the slurry: Mix ¼ cup of broth (or water), 1 tablespoon of flour, and a pinch of salt in a small bowl. Set aside.

  2. Prepare the pan: Heat a non-stick pan over medium-high heat, add a bit of vegetable oil and a few drops of sesame oil.

  3. Cook the dumplings: Arrange the dumplings flat side down in a circle in the pan. Cover and cook for about 3 minutes, until they’re sizzling and browning on the bottom.

  4. Add the slurry: Uncover the pan, give the slurry a quick whisk, and pour it around the dumplings. Lower the heat to medium and cook until the liquid evaporates and a golden, crisp “lace skirt” forms around the dumplings. If needed, loosen the edges with a spatula.

  5. Serve: Place a plate over the pan and carefully flip to transfer the dumplings onto the plate. Serve hot with your favorite dipping sauce.

    Dipping saucece:

    1. Mix equal parts soy sauce, black vinegar, minced garlic and chili oil.
