Creamy Scallop Pasta
Makes 2 servings
Ingredients:
8-10 Jumbo scallops (or more of the smaller ones)
spaghetti noodles (however much you want)
1 jar of Alfredo sauce
garlic
butter or vegetable oil
capers
Parsley (dried or fresh)
salt and pepper to taste
Directions:
Prepare scallops by soaking them in some water for 5-10 minutes. Then wash and pat until completely dry. Set aside on some paper towels.
Cook spaghetti noodles according to instructions. Rinse with cold water after they are done.
Fry garlic in some oil until fragrant.
Pour alfredo sauce into the oil and garlic. Simmer on medium heat until heated through.
Sprinkle in parsley.
On another burner, heat up a skillet with some oil. Wait until it has heated to a very hot temp. Place scallops on skillet and fry for 3-5 minutes on one side or until they easily release from skillet. Cook for 2 minutes on the other side then set aside on a separate plate.
Mix the alfredo sauce together with spaghetti.
Plate by placing pasta first, topping with capers and the scallops. Then sprinkle parsley to garnish.
