Funfetti Butter Mochi

Ingredients:

  • 8 oz mochiko glutinous rice flour

  • 1/2 cup sugar

  • baking powder

  • 1/2 cup of sprinkles (and extra to sprinkle on top)

  • 1/2 cup butter

  • 1/4 tsp salt

Notes:

  • If you want the sprinkles to remain suspended in the cake, coat them in a bit of the mochiko flour before folding into the dough. This will allow them to float in the middle of the batter rather than sink to the bototm.
