Funfetti Butter Mochi
Ingredients:
8 oz mochiko glutinous rice flour
1/2 cup sugar
baking powder
1/2 cup of sprinkles (and extra to sprinkle on top)
1/2 cup butter
1/4 tsp salt

Notes:
If you want the sprinkles to remain suspended in the cake, coat them in a bit of the mochiko flour before folding into the dough. This will allow them to float in the middle of the batter rather than sink to the bototm.
